Demystifying Chinese Cookware

Every culinary heritage has its own traditional cookware that has been passed down from generation to generation, and along the way improved with the discovery of new materials and technology.

Cast Iron Wok

The introduction of rice cooker in the early 60's has certainly revolutionised the Chinese kitchen. However, certain things remain unchanged. To the uninitiated Chinese cooking paraphernalia can be a bit of a mystery.

Cast Iron Wok

Some of the better-known cooking utensils like the wok and bamboo steamer don't need much explanation. However, there is more to Chinese cooking than just stir-frying and steaming.

The wok is perhaps the most well know Chinese cooking implement worldwide and is often associated with stir-fry cooking. But it is also a versatile multi-functional utensil as far as Chinese chefs are concerned. In addition to stir-frying techniques, one can also steam, pan fry, deep fry, boil, braise and even steam bake in a wok.

The best wok is made from cast iron. It cooks better, doesn't easily stain and is low maintenance. Stainless steel wok tends to leave stubborn greasy patches around the rim, which require a lot of scrubbing. Today, wok is also available in non-stick material and mostly with a flat bottom for electric or induction cooker. The most recent is the electric wok. It will do the job but to traditionalist and purists, a proper wok is meant to be used over open flame.

But long before the discovery of metal, the most common cooking vessel in ancient China is made from clay. Chinese clay pots have a long history, which dates back to the Neolithic period.

Most of the clay pots seen in Asian grocery stores, particularly in Chinese groceries are made in Guangzhou in Southern China. These pots come in various shapes and sizes, and each shape is unique in its application.

There is a pot exclusively used for preparing traditional Chinese herbal medicine. It has a short handle protruding from one side, a lid and a spout on another, giving this pot its unique appearance.

Then there is the big pot exclusively for soup. Tall with a slightly rotund body, this pot comes with a tight fitted lid and a protruded short handle on the side.

There is a third type of clay pot, which is used mainly for preparing both stew-like meat and vegetable dish, and a rice and meat combination dish. The mouth of the pot is much wider than the base, which is usually flat and it comes with a tight fitted lid to keep the moisture in. Another unique feature of the pot is the wire mesh that criss-crosses the outside of the pot. This pot is excellent for stewing, especially meat like chicken and lamb, or tofu and tempeh for vegetarians.

A clay pot's biggest advantage is its heat retaining property. Dishes cooked in a clay pot can retain heat for well over an hour, plus the food has a subtle earthy flavour to it.

Most of the clay pots sold are either partially (only the inside) or entirely glazed. Test carried out on all three types tested negative for lead, but the highly decorative and colourful chinaware, including some blue and white styles, contained lead. For cooking purposes, it is best to stick to regular clay pots.

Estimating Roof Price

As with any major job that needs doing to the house one of the most important factors that is likely to play on your mind is the cost. Roof price is made up of several factors, that we discuss below, and you should always be careful that you aren't compromising quality or service in order to lower the roof price by a few dollars. Many roofing contractors will provide similarly price quotes but you should always ensure that you are comparing them on a like for like basis and don't forget that the cheapest offer isn't necessarily the best value for money and the most expensive offer isn't necessarily the worst value for money.

Cast Iron Wok

Materials

Cast Iron Wok

Materials will be one of the biggest factors involved in calculating your roof price and while it is possible to reduce the cost by using different types of material you have to remember that this can often lead to a false economy. If using a different material means a saving of 10% on your roof price, but the material will last 30% less time then your best option is to choose the more expensive material. Obviously it is important that you select materials that are hard wearing and good looking where required but are also cost effective. You should have selected a roofing contractor that you have some faith in and discussing the particular materials with him or her will usually give you the answers you are looking for.

Labor

Labor cost may vary slightly from one contractor to another but not by very much and it is certainly unlikely to be an area that can be negotiated. Within your roof price will be charges for all laborers including the people who strip your roof and load the skip. Any preliminary work you can do yourself is always advisable and if you are able to do any of the menial work yourself then you should consider this also. You need to check the terms of liability insurance with the roofing contractor first though and agree the tasks you will complete yourself before negotiating a contract. This really can make a difference to your roof price.

Profit

This is the area that may have a little room for negotiation but every company needs to make a profit. Get quotes from small companies and from large companies and compare the roof price associated with these quotes. While small companies may not require the same level of profit as the larger companies, they will usually have to pay more for materials and other factors making the bottom line roof price very similar.

Contingencies and other costs

Things can go wrong, even to professionals. Roof work is by no means any different and roofing contractors may include a contingency fund in their quote. This means that if they do come across a problem then they won't need to persuade you to part with more money before they can continue. You should, of course, find out what happens to this contingency fund if it isn't required. You may think you are better off having the contingency fund taken out of the roof price but prepare yourself for having to stump up extra money if you do try this.

What is the Best Cookware to Buy For Your Kitchen?

What is the best cookware for your kitchen and what should you consider when buying it for your kitchen? When shopping for pots, pans and other cookware some people are only concerned about the aesthetic and whether or not it is the color to match the rest of their kitchen décor and there is absolutely nothing wrong with that approach.

Cast Iron Wok

However if you take your cooking seriously you will most likely want to take a more functionally approach when choosing the best type of cookware for your kitchen.

Cast Iron Wok

One of the key things to consider when choosing pots, pans, or any type of cookware set is the material that it is made from.

Some of the best rated cookware for heat conduction is copper but it is expensive and is reactive to certain acidic foods.

Copper, to some degree cast iron and aluminum react to certain acidic foods like tomato sauce which may change the flavor or color of the food you are preparing. The one exception to this would be anodized aluminum, which does not react to acidic foods.

So what would be the best cookware to buy for your kitchen? In my opinion the most versatile cookware for the kitchen is made of stainless steel. It will not pit or corrode and doesn't react with acid.

However it does not conduct heat efficiently so in the higher quality pots and pans some manufacturers will sandwich aluminum between the internal and external layer of the stainless steel. This greatly increases heat conduction and efficiency of the stainless steel cookware.

In my opinion I think the best cookware sets are ones that offer basic shapes and sizes and the handles and lids are all metal. The reason why I prefer all metal handles and lids is because you can start your cooking process on the stove top like searing or sautéing and then finish the cooking process in the oven or under the broiler all in one pot or pan.

Also it has been my experience that even after you have purchased the best type of cookware for you cooking needs, there will always be a few specialty pieces that you may need to purchase in order to supplement your set.

Cooking Tips for Aspiring Cooks

For some people, cooking is a fun hobby. For others, cooking is a must in their daily life. No matter what your specific situation is, learning more about cooking is what will make you become a better cook.

Cast Iron Wok

Cookware You Should Have

Cast Iron Wok

To cook well, one of the items that you should spend some money on is your cookware. Investing in the best cookware set is extremely valuable as these pots and pans serve as the foundation for all of your cooking. You will want to extend the life of these tools as long as possible. Cooking is so much easier if you use high quality cookware.

Use non-stick cookware when you want to cook healthier. These pans have a coating on them that makes food easily slide out, even with no oil. This is great for trying to cut down the fat in your diet. If you do use oil, you will use far less oil.

Always use rubber, nylon or silicone spoons and spatulas when cooking in non-stick cookware. Harder utensils, such as metal one, can scratch or gouge the coating, reducing the effectiveness of the pan and potentially allowing the coating to flake into your food. This is not only unappetizing, but possibly harmful to your health.

If you invest in nothing else in the line of cookware, purchase a non-stick roasting pan with a removable roasting rack. Instead of wrestling with a disposable roasting pan this Thanksgiving, praying it doesn't collapse, a decent quality roasting pan can save you time, money and heartache. Look for a deep pan with steel handles able to hold the largest turkey or piece of meat that you would normally buy for your family, along with a roasting rack that enables you to lift the meat from the pan effortlessly. The non-stick coating will make cleaning a breeze and the pan can also be used for a large sheet cake, a pan of lasagna and so much more.

Cooking Tips

When you are cooking meat, you should never use a fork to turn the meat over. You should always use a pair of tongs or a spatula. Piercing meat with a fork allows all of the juices to run out and your meat will be drier, so you never want to use anything pointy to flip the meat.

While cooking pasta, you should cook it about 60 seconds less than the cooking time that is printed on the package. You can then put the pasta in whatever sauce you have prepared with it and let it complete its cooking process while it soaks up all of the flavors of the sauce.

If you are making a salad for a potluck or picnic, place an upside-down saucer at the bottom of the salad bowl. Extra dressing and juice from vegetables like tomatoes will seep to the bottom and run underneath the saucer, which keeps the greens in the salad crisp and free from wilting.

These ideas are a fantastic beginning to creating a variety of healthful and tasty dishes. Use them in your own cooking to give your family a special treat today. There's no such thing as a bad cook. Cooking delicious meals is something that anyone can learn to do. With a little practice, you'll be making great tasting food in no time.

Chinese Cooking Tools - 7 Essential Chinese Cooking Tools!

Chinese cuisine has gradually developed and spread across various places in the US because of across-the-board usage of Chinese cooking equipment that have facilitated the setting of high cooking standards. The equipment is the utensils or tools that are normally used to make various kinds of Chinese dishes. Certified Chinese chefs extensively use seven important utensils to prepare dishes effortlessly in restaurants. These tools are the cleaver, wide-blade spatula, long wooden chopsticks, Chinese Wok, frying strainer, ladle/scoop, and bamboo steamer. We will now study these Chinese cooking equipment carefully.

Cast Iron Wok

Amongst the utensils used is the Wok, which plays a central role in the preparation of most of the Chinese food. Carbon steel and cast iron are the materials used in the Wok. Although they occur in various sizes, a majority of people favor the standard sized Wok of 14 inches. This utensil is quite sizeable and broad and can easily hold duck, fish, and chicken together with the extra ingredients. Generally, the wok includes a lid to ensure that the heat and flavor do not escape. Woks with wooden handles are preferred more since they are bad conductors of heat unlike metal grips.

Cast Iron Wok

The cleaver is primarily used for chopping in Chinese cooking and is relatively low-priced when compared to stainless steel. Skilled cooks widely use cleavers of carbon steel. These tools are available in different shapes and weights. The third tool used in Chinese cooking is the frying strainer and this is intended for deep-frying various ingredients. The finest strainers are those that are made of wire mesh. Frying strainers fitted with extended bamboo handles are the ideal tools since heat is not conducted through them.

The fourth key tool used in Chinese cooking is the broad-blade Spatula. It has a long grip that makes sure a safe distance is maintained from the heat. The Spatula is designed for scooping and stir frying food. The scoop serves a twofold function of taking out the food from the wok. The wooden chopsticks are mainly used for stirring the food in the wok. These chopsticks are crafted from wood of the finest quality, and hence do not become hot to the touch.

The Bamboo Steamer has a cover and it is to be inserted into the iron wok. It can be used either individually or by mounting collectively. Made of bamboo, the steamer can easily be cleaned by washing with water. Many of the utensils used in Chinese cooking are of multi-use and are a piece of good fortune for food buffs fond of cooking delectable Chinese dishes.
